[dropcap]S[/dropcap]ome days you just want to forget about it and eat. Whether you’ve had a long day at work or just don’t want to fuss around with 50 ingredients, throwing a chicken in the oven is almost as easy as it gets.
Now, this does ask for some cooking time so as it bakes work out, walk around the neighborhood, play with your children outside. Anything.

So let’s get to it.
Zesty Lemon Roasted Chicken
Ingredients:
- 3lb organic whole chicken - 1 lemon - 5T lemon pepper - 1T coconut oil - 3 cups of mixed veggies - 5T garlic powder - pinch of salt
Preparation:
1. Preheat oven to 375 degrees F. 2. Rinse chicken off in cool filtered water. 3. Pat dry. 4. Season the chicken with garlic powder & lemon pepper. I enjoy a lot of lemon pepper. 5. Add a little lemon zest over the chicken. 6. Puncture 3 holes in the lemon and then put inside of the chicken. 7. Place chicken in rotisserie rack. 8. Put chicken in oven and cook according to the following directions depending on your chickens weight:
- 2-1/2 to 3 pounds: Roast at 350 degrees F for 1 to 1-1/4 hours. - 3 to 3-1/2 pounds: Roast at 350 degrees F for 1-1/4 to 1-1/2 hours. - 3-1/2 to 4 pounds: Roast at 350 degrees F for 1-1/4 to 1-3/4 hours. - 4-1/2 to 5 pounds: Roast at 350 degrees F for 1-1/2 to 2 hours.
9. Continue to baste the chicken until done. 10. Once the chicken is done pull it out of the oven and remove the lemon. 11. Cut the lemon in half and squeeze the juice over the chicken.
Side:
1. Saute veggies in coconut oil until done. 2. Sprinkle salt and garlic powder and serve with chicken.
It’s an easy whole chicken meal that will get your mouth-watering.
After a long day I crave this meal and it’s GREAT for lunch the next day.
Just get past the idea of having to wait 90 minutes for this to finish and it’ll be well worth it.
